Molasses Cookies

These cookies are crisp on the outside and soft and chewy on the inside. They are full of tons of warm and cozy winter flavors and don’t require any chilling!

These cookies could not be easier to make! And the best part? You don’t have to chill the dough, so your cookies can be enjoyed right away!

Helpful Tips

Our first time making molasses cookies was unsuccessful, to say the least. We used blackstrap molasses which is much more salty and bitter than regular molasses. Let’s just say that we were definitely surprised when we bit into those cookies!! So, lesson learned: make sure your molasses is just the classic molasses, not blackstrap!

Another tip we have is to slightly flatten these cookies with the back of a spoon after rolling them out. Flattening them slightly will make cookies with the same thickness as shown in the pictures, which we think is just perfect! We also roll these cookies in granulated sugar before baking for an extra special holiday feel!

The flavor in these molasses cookies is achieved through a combination of warm and cozy winter flavors: molasses, brown sugar, cinnamon, nutmeg, ginger, and more!! The mixture of spices is SO GOOD! Your house will smell incredible after taking these out of the oven!

These cookies are crisp on the outside and soft and chewy on the inside. They are full of tons of warm and cozy winter flavors and don't require any chilling!

Yields: 27 cookies
Ingredients
For the cookies:
  • 2 cups (256g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 stick (113g) unsalted butter, softened
  • 2/3 cup (130g) packed light or dark brown sugar
  • 3 tablespoons (60mL) molasses (not blackstrap!)
  • 1 large egg
  • 1 teaspoon vanilla extract
For rolling the cookies:
  • 3 tablespoons granulated sugar
Instructions
  1. Preheat oven to 350ºF. In a medium-sized bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.

  2. In a large bowl, use a handheld electric or stand mixer to beat the butter on medium speed for 2 minutes. Add the brown sugar and beat for 2 more minutes on medium speed, until smooth and creamy. Add the molasses, egg, and vanilla and beat on medium speed for about 1 minute, or until fluffy and lighter in color. Add the dry ingredients and use a spatula to combine.

  3. Roll the cookie dough into balls and use the back of a spoon to flatten the tops. Put the 3 tablespoons of sugar in a bowl and roll each dough ball in sugar. Place cookies on a baking sheet and bake at 350ºF for 9-11 minutes.
