Molasses Cookies

These cookies are crisp on the outside and soft and chewy on the inside. They are full of tons of warm and cozy winter flavors and don't require any chilling!

Yields: 27 cookies
Ingredients
For the cookies:
  • 2 cups (256g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 stick (113g) unsalted butter, softened
  • 2/3 cup (130g) packed light or dark brown sugar
  • 3 tablespoons (60mL) molasses (not blackstrap!)
  • 1 large egg
  • 1 teaspoon vanilla extract
For rolling the cookies:
  • 3 tablespoons granulated sugar
Instructions
  1. Preheat oven to 350ºF. In a medium-sized bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.

  2. In a large bowl, use a handheld electric or stand mixer to beat the butter on medium speed for 2 minutes. Add the brown sugar and beat for 2 more minutes on medium speed, until smooth and creamy. Add the molasses, egg, and vanilla and beat on medium speed for about 1 minute, or until fluffy and lighter in color. Add the dry ingredients and use a spatula to combine.

  3. Roll the cookie dough into balls and use the back of a spoon to flatten the tops. Put the 3 tablespoons of sugar in a bowl and roll each dough ball in sugar. Place cookies on a baking sheet and bake at 350ºF for 9-11 minutes.
