Easy Sugar Cookies

Sweet sugar cookies that are super soft and chewy! These sugar cookies could not be easier to make! 

New recipe for our favorite easy sugar cookies!! These cookies would be perfect to make for Christmas today!! Flavored with a hint of vanilla, these cookies are so delicious!! And they are unbelievably soft and chewy!

Why Chill the Dough?

Normally, we like to stay away from chilling cookie dough. Mostly because it just saves time and means we can eat our cookies even sooner!

But with these cookies, chilling is a must. The granulated sugar causes the cookies to spread a lot, so the dough needs some time in the refrigerator to chill. Don’t worry though, it is just one hour, and then you can enjoy your delicious cookies!;)

The best part about these cookies? They take just minutes to prepare and only require 7 ingredients! And all the ingredients are probably already in your pantry right now!!

Sweet sugar cookies that are super soft and chewy! These sugar cookies could not be easier to make! 

Yields: 20 cookies
Ingredients
For the cookies:
  • 1 and 1/2 cups (200g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 and 1/2 teaspoons vanilla extract
For rolling the cookies (optional):
  • 3 tablespoons granulated sugar
Instructions
  1. Preheat oven to 350ºF. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside.

  2. In a large bowl, use a handheld electric mixer to beat the butter on medium speed for 2 minutes, until creamy. Add the sugar and beat on medium speed for 2 more minutes. Add the egg, egg yolk, and vanilla and beat on low speed until combined. Add the dry ingredients and use a spatula to combine.

  3. Cover the bowl of cookie dough with plastic wrap and chill the dough for at least 1 hour in the refrigerator. Once chilled, roll the dough into equal-sized balls and roll each one in sugar (if desired). Place cookies on a baking sheet and bake at 350ºF for 11-12 minutes.
