Best Ever Fudgy Brownies

These really are the best brownies!! They are incredibly thick and fudgy, and so addicting! Perfect with a scoop of vanilla ice cream on top!

WOW! We are so excited to share this fudgy brownie recipe!! For years, we have been eating the boxed mix brownies. We never thought we could make a homemade version that would taste as good, but boy, were we wrong!! This recipe blows the boxed version away!! It is so much better!! (everything from scratch is!!)

We are pretty picky with our brownies, so each time we made a recipe from scratch, there was always something we didn’t like about them. It has taken SOO many tries to get the perfect brownie. In our first recipe test, they were way too cakey and dry. So, we took away a lot of the flour and added more chopped chocolate. That was just what we needed to do, and the result was THE MOST fudgy brownie we have ever had! They are insanely chocolate-y, and so addicting!!

Instead of adding chocolate chips, we figured these brownies needed something special. It was the perfect time to pull out our semi-sweet chocolate chunks! We saw them at Trader Joe’s, and have been excited to try them in a recipe. This specific brand of chocolate chunks has less sugar than chocolate chips, but since these brownies are pretty sweet, the extra bitterness in the chocolate chunks is perfect. SOO good!!

The great part about these brownies is that they take no time at all to make!! All you need is a saucepan, and one bowl! You don’t even need an electric mixer for this recipe!!;) The saucepan is for melting the chocolate and the butter. It is actually a lot easier to melt the ingredients over the stove than to do it in the microwave–it takes a lot less work and time! After melting the butter and chocolate, everything else is done in one bowl! Altogether, the prep time is only 10 minutes! It doesn’t get much easier than that!!;)

Tips for your brownie baking:

  1. Use a GOOD quality chocolate bar! This is really important, because the chocolate bar is what gives these brownies most of their chocolate flavor. We used a Ghirardelli semi-sweet baking bar.
  2. Chop the chocolate bar, and cut the butter into cubes. This makes melting these ingredients over the stove much faster.
  3. Add in the sugars to the chocolate mixture while it is still warm. This ensures you get extra fudgy brownies!

If you make these brownies, we definitely recommend eating them a la mode! We even make brownie sundaes with them, using vanilla ice cream, hot fudge, and fresh strawberries! Yum! This is the best way to eat these fudgy brownies!:)

Yields: 16 brownies
Ingredients
  • 4 ounces (113g) semi-sweet chocolate baking bar (See Notes)
  • 1 stick (112g) salted butter
  • 3/4 cup (158g) granulated sugar
  • 1/4 cup (28g) light or dark brown sugar, unpacked
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (47g) all purpose flour
  • 1/4 cup (22g) unsweetened cocoa powder
  • 3/4 cup (119g) semi-sweet chocolate chunks (See Notes)
Instructions
  1. Preheat oven to 350°F. Grease a 9x9 inch baking pan with nonstick spray. Set aside.

  2. Cut the butter into cubes, and roughly chop the baking bar. Melt the butter and chopped chocolate in a medium-sized saucepan over medium-low heat, stirring constantly for 2-3 minutes, or until the mixture is completely melted. Remove the saucepan from the stove and pour the chocolate mixture into a large bowl.

  3. Add the sugars to the chocolate mixture while it is still warm, and whisk until combined. Add the eggs one at a time, whisking until combined after each addition. Add the vanilla extract, and mix. Sift in the flour and cocoa powder, and whisk until fully combined. Fold in the chocolate chunks.

  4. Pour the brownie batter into the prepared pan, and bake at 350°F for 20-22 minutes. Allow the brownies to completely cool inside the pan before cutting. Serve with ice cream and enjoy!

Recipe Notes

Be sure to use a good quality baking bar. We use Ghirardelli.

 

Semi-sweet chocolate chips can be substituted for the semi-sweet chocolate chunks.

 

Make Ahead Tip: These brownies can be stored in an airtight container at room temperature for 2-3 days. They also freeze great, and can be stored in an airtight container in the freezer for 1-2 months.
