We wanted to create a recipe with a bright citrus flavor, so of course, we decided to make something with lemon! Lemon has such a fresh, bold flavor that is perfect for baked desserts and brightening up a hot summer day!
While fried donuts are delicious, they require a lot of oil in order to cook, so they tend to be a hassle to make. However, with baked donuts, all you have to do is fill your donut pan and put it in the oven. This recipe is super quick and easy, so if you don’t have much time, these would be the perfect thing to make!:)
Tips and Tricks:
- Use a handheld electric mixer to mix all of the ingredients until everything is just combined. This ensures that the batter has a nice and smooth consistency.
- If you don’t have a piping bag, you can use a plastic bag to pipe the donut batter into the pan for perfect-looking donuts.
- If you want to store your donuts, keep them in an airtight container without the glaze to prevent them from getting soggy; and glaze them the day you eat them.
- We recommend eating the donuts the day of, but they are still good the next day.

These fluffy donuts have an amazing lemon flavor that pairs perfectly with the tart glaze!
- 1 cup (125g) all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 tbsp (42mL) unsalted butter, melted
- 1/3 cup (65g) granulated sugar
- 1 tbsp poppy seeds
- 1 large egg
- 1/2 tsp vanilla extract
- 2 tbsp (24mL) lemon juice
- 2 tsp lemon zest
- 1/4 cup (70g) plain Greek yogurt
- 2 tbsp (30mL) milk, any kind
- 1 cup (98g) powdered sugar
- 1 tbsp lemon juice
- 1 tbsp milk, any kind

Preheat the oven to 350ºF and grease a donut pan with nonstick spray.

In a large mixing bowl, combine flour, baking powder, baking soda, salt, and poppy seeds. Set aside.

In a large glass measuring cup, whisk the butter, sugar, egg, vanilla, lemon juice, lemon zest, yogurt, and mix until fully incorporated.

Add the wet ingredients into the dry ingredients and beat with a handheld electric mixer on low speed until just combined and the batter is a smooth consistency. Fill a piping bag or large plastic bag with the batter and cut off a corner; pipe into each donut cavity until almost full (for reference, check picture above). Bake at 350ºF for 8-10 minutes, or until a toothpick inserted comes out clean. Donuts can be carefully removed from the pan as soon as they finish baking.

While the donuts are baking, prepare the glaze. Simply whisk the powdered sugar, lemon juice, and milk until smooth.

Once the donuts have cooled for about 10 minutes, dip each donut into the glaze, allowing any excess glaze to drip off.
