We are so happy with the way this banana bread turned out. It is super moist and has a subtle sweetness that balances perfectly with the banana flavor. It’s impossible to eat just one slice! >>We always find ourselves waiting for our bananas to ripen just so that we can make this recipe!!:)
Also, good news–his banana bread is super easy to make! The ingredients are all ones you would have around the house, like bananas, brown sugar, flour–you know, the usual. Also, note that only a small amount of brown sugar is necessary, since overripe bananas are very sweet.

This banana bread is the perfect way to use your old bananas! It is super moist and tender and easy to make!!
- 1 and 1/2 cups (205g) all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 stick (113g) unsalted butter, softened
- 1/2 cup (75g) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup ripe bananas, mashed (about 3 medium bananas)

Preheat oven to 350°F. Grease a loaf pan with nonstick spray, set aside.

In a medium-sized bowl, whisk the flour, cinnamon, baking soda, and salt together.

In a large bowl, use an electric mixer or a stand mixer and beat the butter on medium speed for 2 minutes.

Add the sugar to the butter and beat on medium speed for 2 minutes. Add the eggs one at a time, and mixing until just combined in between each addition. Add the vanilla and mix until combined.

With the mixer on low speed, add the bananas and mix until well combined. Add in the dry ingredients and mix until no lumps remain.

Pour the batter into the prepared pan and bake for 40-45 minutes at 350°F. Allow to cool in the pan until serving.
