What to love about this dessert
- First and foremost, the best part of this dessert is the amazing lava center (which gives them their name). The center of these cakes is pure gooey chocolatey goodness that just melts in your mouth.
- Individual serving sizes. These cakes are the perfect cute little dessert. Everyone in the family gets their own, so there’s no arguing over who gets the last slice 😉
- Quick and Easy Recipe. Oh yes, this recipe couldn’t be more simple and the directions are really easy to follow! The batter can be whipped up in just 10 minutes. And the baking time is super short too!
Lava Cake Baking Tips
Our tip: Take the extra time to grease each ramekin and then sprinkle with cocoa powder. This will ensure that the cakes are super easy to remove once they are done!
For greasing the ramekins, we use a paper towel and rub a thin layer of butter into each one. Then put a spoonful of cocoa powder in the ramekin and tap the ramekin around until the entire bottom and sides are covered in cocoa powder and then get rid of all the extra (we just pour the extra into the next ramekin so we don’t waste any!).
Probably the hardest thing about baking a lava cake is determining how long to bake them. In general, we recommend staying pretty close to the times we have noted in the recipe, but oven temperatures can vary.
Another tip: The cakes are done cooking once the edges begin to come off the sides. This way, the outside will be cooked, but you’ll be left with the perfect gooey lava center that you’re looking for;) Using a toothpick wouldn’t be useful here because the center is supposed to be gooey, so you’ll see batter on the toothpick no matter what!
But, no fear if you seemed to bake the cakes wrong. Worst comes to worse, these cakes can still be very thoroughly enjoyed if they are either under-cooked or over-cooked. One way you’ll just have more lava and the other, you’ll just have a normal chocolate cake!
Our last tip is the best one in our opinion–we suggest that you eat these lava cakes a la mode. We think they are best enjoyed this way! Pretty much the only way to eat a lava cake is with a great big scoop of vanilla ice cream on the top! All of that ice cream melting on top of the warm cake, then breaking into the cake just to have all the lava come out…Pretty much the perfect dessert!

These lava cakes are one our favorite chocolate desserts! This recipe is super quick, but makes for a perfectly rich and decadent treat!
- 1 stick (113g) salted butter
- 6 ounces (170g) semisweet chocolate baking bar, roughly chopped
- 1/3 cup + 1 Tablespoon (78g) granulated sugar
- 2 large eggs
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/4 cup (32g) all-purpose flour

Preheat oven to 400ºF. Prep six 6-ounce ramekins by greasing each one with butter and covering in cocoa powder. Place the ramekins on a baking sheet.

In a microwave safe medium-sized bowl, melt the butter and chopped chocolate in 30 second intervals until melted, mixing in between each interval.

In a large bowl, use a handheld electric or stand mixer to beat the sugar, eggs, egg yolks, and vanilla on high speed for about 3 minutes, until pale and thick.

Add the flour to the chocolate mixture and mix until no lumps remain. Fold this into the egg mixture until fully combined. Pour the batter equally into the prepared ramekins and bake at 400ºF for about 12-14 minutes, or until the edges are firm. Serve warm. *(See Notes)
*To remove the lava cakes from the ramekins, we recommend removing them while they are still hot so they don’t stick to the bottom. To remove the lava cakes, use an oven mitt to flip the ramekin over onto a plate. We recommend serving warm. Lava cakes are best enjoyed the day they are made.
