We hope you all had a great New Year! This snickerdoodle recipe is the perfect way to start off 2020! They only take 20 minutes and are great for sharing with friends and family. These cookies are very easy to make, but it took a few tries to create the perfect recipe. Whenever we would make them, they would either be super thick or way too thin. But on our third try, we made the perfect cookies with an amazing texture and flavor!
These snickerdoodles are perfectly crispy on the outside yet soft and chewy on the inside. They have a slight tang from the cream of tartar and a hint of cinnamon not just from the cinnamon sugar, but from inside the dough.
Tips:
- Make sure to line your baking sheet with parchment paper because this will keep them from sticking and will give them a nice round shape.
- Spread them out evenly and give them enough space so that they can spread out without touching each other.
- It is easy to overbake them, so after 10-12 minutes, check to see if they are turning golden brown slightly around the sides and on the bottom.

- 2 sticks (226g) unsalted butter, softened
- 1 1/3 cup (275g) granulated sugar
- 2 3/4 cup (350g) all purpose flour
- 2 large eggs
- 2 tsp vanilla
- 1 1/2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup (50g) granulated sugar
- 1 tbsp ground cinnamon

Preheat the oven to 350ºF.

In a large bowl, beat the butter for 1 minute on medium-high speed. Add the granulated sugar and beat together for 3 minutes on medium-high speed until light and fluffy.

Add the eggs and vanilla and beat on low speed until just combined.

In a medium-sized bowl, combine the flour, baking soda, cream of tartar, salt, and cinnamon. Add the dry ingredients to the butter and sugar mixture and use a spatula to incorporate them.

Roll the cookie dough into balls and then roll in the cinnamon-sugar mixture. Place cookies on a baking sheet and bake at 350ºF for 10-12 minutes.
