(Still not sure if it is coffeecake or coffee cake, but coffee cake looks better, so we are going with that!!;)
Yippee!! We LOVE this recipe and are soooo excited for you to try it! We would have to say that coffee cake is arguably one of the best sweets ever invented. The cake is flavorful and tangy, and complemented by the sweet and cinnamon-y crumb topping–that’s a slice of perfection if we’ve ever tasted one!!;) Our whole family is seriously OBSESSED with this recipe!
The best part about this cake how easy it is!! This seriously might be one of the easiest recipes on our blog–it couldn’t be quicker!
Contrary to its name, coffee cake actually doesn’t have any coffee it in!! Coffee cake is made of two parts–the cake and the crumb topping. The cake has a buttery and tangy taste–very flavorful! For the cake, we use just a few staple ingredients like flour (just all-purpose, no need for cake flour in this recipe!), sugar, butter, along with buttermilk and plain Greek yogurt for lots of added moisture and tangy-ness!
Now, let’s talk about the real star of the show here–the crumb topping!! The cinnamon crumb topping is perfection. Very sweet, so it is the perfect complement to the slightly tangy cake! After testing this recipe once, we decided it needed more topping, so we 1.5x the topping recipe this time. You’re welcome;)
Eat this coffee cake plain or with an actual cup of coffee, but either way, we know you’ll love it!!

- 3/4 cup (115g) all-purpose flour
- 3/4 cup (160g) packed brown sugar (light or dark)
- 1 and 1/2 teaspoons ground cinnamon
- 6 tablespoons (90g) salted butter, melted
- 1 and 1/2 cups (205g) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons (90g) unsalted butter, softened
- 3/4 cup (170g) granulated sugar
- 1 large egg
- 1 and 1/2 teaspoons vanilla extract
- 1 cup (235g) plain Greek yogurt (See Notes)
- 1/3 cup (80mL) buttermilk

In a medium-sized bowl, combine the flour, brown sugar, and cinnamon. Add the melted butter and use a fork to mix the crumb topping together until no flour is visible. Set aside for later.

Preheat oven to 350ºF. Spray a 9 by 9 inch pan with nonstick spray. Set aside.

In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In a large bowl, use a handheld electric mixer or stand mixer to beat the butter on medium speed for 2 minutes. Add sugar and beat on medium speed for 2 more minutes. Add egg and vanilla and mix until combined. Add half of the flour mixture and mix until mostly combined. Add the Greek yogurt and mix until incorporated. Add the rest of the flour mixture and beat until no lumps remain. Add the buttermilk and mix until smooth.

Pour the batter evenly into the prepared pan. Sprinkle the crumb topping evenly over the batter. Bake at 350ºF for 35-40 minutes, or until a toothpick inserted in the center of the cake comes out clean. Allow the cake to cool completely in the pan before cutting and serving.
Use 2% or full fat plain Greek yogurt.
Make Ahead Tip: Place foil over the top of the pan and store this cake at room temperature for 2-3 days.

I do not know what happened to my coffee cake but it looks like a custard something😬! I did not have a square pan so I had to use a round one so maybe that was the reason?
