This ice cream is THE EASIEST ice cream we have ever made, and it turns out so unbelievably creamy and delicious every time. It only uses 7 ingredients and doesn’t require eggs!!
Summer is here!! Finally!! But, with summer comes the summer heat… What better way to cool off than with homemade ice cream!!
We bought an ice cream maker last summer and we have tried lots of different ice cream bases since then. There are SOOO many ways to make ice cream!!
A lot of the ice cream recipes we tried were just so difficult and time-consuming to make, so we wanted our own ice cream recipe to be really easy!
We really liked the idea of an ice cream base without eggs!! And after all of our ice cream making, we settled on the idea of whole milk combined with heavy cream. This combination was just unbeatable–so creamy yet light, and not overly rich!
Chocolate “Chips”
Instead of adding chocolate chips to this ice cream, we decided to pipe a chocolate mixture into the churning ice cream. Doing this creates thinner chocolate chips, ensuring that you aren’t biting into rock-solid chocolate chunks!;) We got the idea to do this method from Italian stracciatella gelato!
Making the chocolate “chips” is really easy–just combine a few ingredients and melt in the microwave to create the chocolate mixture, then pipe into the churning ice cream 5 minutes before it is done. It is super easy, and definitely an extra step worth taking!!
Another thing we love about this homemade ice cream is that it doesn’t have all of the chemicals that store-bought ice cream does!!;)
This ice cream is the perfect summer dessert–so creamy and refreshing!!

This ice cream is THE EASIEST ice cream we have ever made, and it turns out so unbelievably creamy and delicious every time. It only uses 4 ingredients and doesn't require eggs!!
- 2 cups (472mL) heavy cream
- 1 cup (242mL) whole milk
- 3/4 cup (157g) granulated sugar
- 1 and 1/2 teaspoon vanilla extract
- 1/3 cup (66g) semi-sweet chocolate chips
- 1 tablespoon (14g) salted butter
- 1 teaspoon water

In a medium-sized saucepan, heat heavy cream, milk, granulated sugar, and vanilla over medium heat, stirring constantly for about 5 minutes, or until the mixture begins to bubble. Remove from heat and transfer the mixture into a large bowl. Allow to cool for about 1 hour.

Once the mixture is cooled, cover with plastic wrap and place in the refrigerator for at least 8 hours or overnight.

After chilling, give the ice cream a quick stir. Churn the mixture in an ice cream maker, according to its instructions.

While the ice cream is churning, the chocolate "chips" can be made. Combine the chocolate chips, butter, and water in a microwave-safe bowl and microwave in 20-second intervals, stirring in between each interval until the mixture is melted. Pour the chocolate mixture into a ziplock bag and cut a small hole in the corner. 5 minutes before the ice cream is done churning, begin drizzling the chocolate mixture into the ice cream.

After the ice cream is churned, it will be very soft and should be poured into a closed container and frozen for at least a few hours before enjoying. This ice cream lasts about 3-4 days.
