This skillet cookie is amazingly crispy on the outside and soft and chewy on the inside, even better than BJ's!! Plus, the recipe is super quick to make and doesn't require an electric mixer!

Yields: 8 slices
Ingredients
  • 1 and 1/2 sticks (169g) salted butter, melted
  • 1/2 cup (106g) packed brown sugar (light or dark)
  • 1/2 cup (100g) granulated sugar
  • 1 and 1/2 cups (200g) all purpose flour
  • 3/4 teaspoon baking soda
  • pinch of salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (186g) semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350°F. In a small bowl, combine the flour, baking soda, and pinch of salt. Set aside.

  2. In a large bowl, whisk together the melted butter, brown sugar and granulated sugar. Add the egg and vanilla, and whisk until combined. Add in the dry ingredients, and use a spatula to combine until no lumps remain. Fold in the chocolate chips. Pour the batter into a 9 inch skillet, and bake at 350°F for about 25-30 minutes, or until the edges become crisp. Serve warm.
