Chocolate Lava Cakes

These lava cakes are one our favorite chocolate desserts! This recipe is super quick, but makes for a perfectly rich and decadent treat!

Yields: 6 servings
Ingredients
  • 1 stick (113g) salted butter
  • 6 ounces (170g) semisweet chocolate baking bar, roughly chopped
  • 1/3 cup + 1 Tablespoon (78g) granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup (32g) all-purpose flour
Instructions
  1. Preheat oven to 400ºF. Prep six 6-ounce ramekins by greasing each one with butter and covering in cocoa powder. Place the ramekins on a baking sheet.

  2. In a microwave safe medium-sized bowl, melt the butter and chopped chocolate in 30 second intervals until melted, mixing in between each interval.

  3. In a large bowl, use a handheld electric or stand mixer to beat the sugar, eggs, egg yolks, and vanilla on high speed for about 3 minutes, until pale and thick.

  4. Add the flour to the chocolate mixture and mix until no lumps remain. Fold this into the egg mixture until fully combined. Pour the batter equally into the prepared ramekins and bake at 400ºF for about 12-14 minutes, or until the edges are firm. Serve warm. *(See Notes)

Recipe Notes

*To remove the lava cakes from the ramekins, we recommend removing them while they are still hot so they don't stick to the bottom. To remove the lava cakes, use an oven mitt to flip the ramekin over onto a plate. We recommend serving warm. Lava cakes are best enjoyed the day they are made.
