These fluffy donuts have an amazing lemon flavor that pairs perfectly with the tart glaze!

Yields: 6 donuts
Ingredients
For the donuts:
  • 1 cup (125g) all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp (42mL) unsalted butter, melted
  • 1/3 cup (65g) granulated sugar
  • 1 tbsp poppy seeds
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 2 tbsp (24mL) lemon juice
  • 2 tsp lemon zest
  • 1/4 cup (70g) plain Greek yogurt
  • 2 tbsp (30mL) milk, any kind
For the lemon glaze:
  • 1 cup (98g) powdered sugar
  • 1 tbsp lemon juice
  • 1 tbsp milk, any kind
Instructions
To make the donuts:
  1. Preheat the oven to 350ºF and grease a donut pan with nonstick spray.

  2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, and poppy seeds. Set aside.

  3. In a large glass measuring cup, whisk the butter, sugar, egg, vanilla, lemon juice, lemon zest, yogurt, and mix until fully incorporated.

  4. Add the wet ingredients into the dry ingredients and beat with a handheld electric mixer on low speed until just combined and the batter is a smooth consistency. Fill a piping bag or large plastic bag with the batter and cut off a corner; pipe into each donut cavity until almost full (for reference, check picture above). Bake at 350ºF for 8-10 minutes, or until a toothpick inserted comes out clean. Donuts can be carefully removed from the pan as soon as they finish baking.

To make the glaze:
  1. While the donuts are baking, prepare the glaze. Simply whisk the powdered sugar, lemon juice, and milk until smooth.

  2. Once the donuts have cooled for about 10 minutes, dip each donut into the glaze, allowing any excess glaze to drip off.
